Grandma Childs’ Macaroni and Cheese

 

1 1/2 cups elbows, uncooked

1-2 cups whole milk

1 large jar Cheez Whiz

 

Cook elbows in salted water and drain.  Don’t overcook!  Add milk to the level of the macaroni.  Add Cheez Whiz.  Put in casserole dish and bake at 325 about 30 minutes.  It will still be soupy.  Let it sit at least another 30 minutes before serving.  Since I always make it on Thanksgiving, I leave it on the stove over the oven vent while everything else is being prepared.

 

Note:  I always double this recipe, so I had to guess at the baking time.  (I bake the larger amount for ~45 minutes.)  You may need to bake it for even less time if making the smaller amount.    I take it out just as a “skin” is beginning to form. 

 

Another baking alternative would be to shut the oven off after 30 minutes and leave the casserole in the oven.  That would probably work even better.  The whole idea is to not let it bake too hard and curdle everything.
