Old Fashioned Pinto Beans

 

1 lb. dried pinto beans

1 medium onion, chopped

1 smoked ham hock

2 Tablespoons chili powder

2 Tablespoons dark brown sugar

1/8 – 1/4 cup canned chopped jalapenos

          OR 1/2 – 1 teaspoon cayenne pepper

1 1/2 teaspoons salt

 

 

Prepare pinto beans by soaking overnight.   Rinse well.  Place in Dutch oven with onions and ham hock.  Add water to barely cover beans.  Cook on very low heat a couple hours or until nearly done, adding water if necessary.   Add remaining ingredients and continue cooking slowly until beans are tender.
