Blueberry Muffins

Blueberry Muffins

 

2 cups sifted flour

1/3 cup sugar

3 tsp. baking powder

1/2 tsp. salt

1 egg

4 tablespoons butter, melted

1 cup milk

1 cup blueberries

 

Mix dry ingredients thoroughly in large bowl.  Beat egg in separate bowl.  Add milk and melted butter.  Mix well (butter will clump up.  That’s okay.)

Make a well in the center of dry ingredients.  Add milk mixture all at once.  Stir gently, ONLY UNTIL DRY INGREDIENTS ARE MOISTENED.  DON”T OVERMIX!  Stir blueberries in gently.  Fill greased muffin tips 2/3 full.  Bake at 400 about 20 minutes.
