Bean Soup

Bean Soup

 

 

1 large onion, chopped

1 ham steak

1 tablespoon butter

4+ cups low sodium beef broth

2 smoked ham hocks

1 lb. navy beans, soaked overnight or according to package directions

Salt and pepper to taste

 

 

Melt butter in dutch oven. Cut ham steak into manageable pieces. Brown in butter on both sides. Remove ham slice and set aside. Deglaze pan with onions. Add beans and enough broth to just cover beans. Add smoked hocks. Cook gently until beans are tender. Remove smoked hocks.

Dice reserved ham steak and return to pan (you may not want to use all of it.) Adjust seasonings, add more broth if desired.
